Robin Hood – Little John Stew, Blackberry Pie, Currant Pie, Gruel

Robin Hood and Little John chilling in the kitchen, breakin’ eggs, stewin’ beef and eatin’ the day away. This is one of my wife’s favorite Disney movies. Mostly because she thinks Robin is a “fox”.
It is a really good, classic Disney movie with some good food to boot!

Little John Burnt Beef Stew

When Robin and Little John are chilling in the forest, they have a giant cauldron over a fire. It starts burning and bubbling over.

Incidentally, when I was making the stew, I forgot to turn down the heat and my stew started to burn. So I guess it’s super authentic to the movie.

Friar Tuck then makes an appearance and tastes it.

He finds it to be fairly spicy. So I searched for a suitable medieval stew I could make. I think I found one that’d be pretty close to what Robin and John were making

Little John Burnt Beef Stew

  • Servings: 6
  • Time: 2 hr 30 min
  • Difficulty: Easy-Medium

Ingredients:
3 lbs Stewing Steak
3 tbs flour
oil for frying
1/2 tsp ground cinnamon
1/4 tsp ground mace (or chili powder)
1/8 tsp ground cloves
4 black peppercorns (crushed)
1 large onion (finely chopped)
6 large sprigs of parsley (finely chopped)
4 cups beef stock
2-3 pieces stale whole wheat bread
3 tbs cider vinegar
1 pinch saffron (or 1/4 tsp turmeric as a sub.)
  1. Toss the beef with the flour to coat.
  2. Cover the base of a large frying pan with a thin layer of oil and place over a medium high heat.
  3. Add the beef and fry, stirring occasionally, until browned.
  4. Add the spices, onion and parsley with a splash of the stock and fry, stirring frequently and scrapping up the crusty layer from the bottom of the pan with a wooden spoon, for about 5 minutes until the onions have started to soften.
  5. Dump contents into large pot with its juices.
  6. Add the rest of the stock with a pinch of salt and bring to a gentle boil. Cover, reduce the heat to low and simmer for 1hr 40 mins, until the beef is tender.
  7. Meanwhile, soak the bread in the vinegar with the saffron .
  8. After the beef is tender, stir into the stew and simmer, uncovered, for about 20 minutes until the bread has broken down and the stew is thick.
  9. Taste and season with salt and freshly ground black pepper.
  10. Serve with buscuits

Trigger’s Blackberry Pie

Trigger's Blackberry Pie

  • Servings: 8
  • Time: 1 hr
  • Difficulty: Medium

Ingredients:
3/4 cups cream
1/4 cup red wine
5 egg yolks
1 whole egg
2 cups blackberries
1/2 cup chopped dates
1/3 cup honey
1/4 tsp ginger
1 pinch saffron (or leave out if not available) 
1/8 tsp ground mace (or chili pepper)
1/8 tsp ground cloves
2 pre-baked pie shells
  1. In a medium saucepan, combine the milk, cream, wine, saffron and other spices, and bring to a boil.
  2. Remove from heat.
  3. In a separate container, beat egg yolks and honey together.
  4. While beating, add a bit of the hot milk mixture. Pour this back into the pot with the hot liquid while whisking furiously.
  5. Place the cut blackberries and dates in baked pie shells and spoon the cream mixture over fruit and into the shells.
  6. Bake at 375° F for 45 minutes, or until the filling has set.

Maid Marian’s Currant Pie

In the same scene, Maid Marian starts throwing pies to help Robin escape.

We wanted to find real currants, for the pie, but we couldn’t. However, Google told me that Blueberries are a close second. So we made a blueberry pie.

Maid Marian's Currant Pie

  • Servings: 8
  • Time: 45 min
  • Difficulty: Easy-medium

Ingredients:
2 egg whites
1/2 cup sugar
2 tsp cornstarch
2 1/4 cups red currants (blueberries)
1 ready to bake pie crust
1 pie crust mix
1/2 tsp lemon zest
1 egg yolk
  1. Prepare the pie crust mix as directed, but add 1 egg yolk and the lemon zest
  2. In a medium bowl, beat egg whites until stiff.
  3. Gradually stir in sugar and cornstarch; beat for 5 minutes.
  4. Fold currants (blueberries) into mixture and pour into pie crust.
  5. Bake in oven for 30-35 minutes, or until top is lightly browned.

Not-in-Nottingham Prison Gruel

Toward the end, the rooster narrator is in jail with the rest of the town. He sings Not In Nottingham. We then see the mama rabbit feeding her baby rabbits something from a bowl.

In general, gruel is a common food for prisons. I’ve always wanted to taste it. So I made it. It tastes like watery oatmeal.

They also showed biscuits. We cheated and made some from a Pillsbury roll. They were great with the stew.

Not-in-Nottingham Prison Gruel

  • Servings: 1-2

Ingredients:
3 tbs oatmeal
2 cups water
salt to taste
  1. Mix the oatmeal with a little cold water to make a paste
  2. Put the rest of the water in a pan
  3. Add the mixture and boil for 10 minutes
  4. Add the salt

Will it Steal from the Rich and Give to the Poor?

Aside from the gruel, not a bad run. The blackberry pie was super sweet. The beef stew was good, and I think if it weren’t burnt, it would have been even better. And the currant (blueberry) pie was delicious

Jungle Book – Bare Necessity Fruit Salad, Pawpaw BBQ Sauce and ants

Baloo is one of the greatest Disney characters in my opinion. He’s just so chill. And boy, he knows how to eat. Almost all of the food mentioned in the movie comes from one song, Bare Necessities. There isn’t really a recipe, just lots of different fruits. So I did some fun things with them.

They actually blended well. One thing I found out is that a Pawpaw is actually another word for papaya. One sad thing, I wasn’t able to find a prickly pear. I went to 5 different places and couldn’t find any. 😦 Instead I used an Asian Pear, because Jungle Book takes place in India, India is in Asia, same thing right?

Bare Necessity Fruit Salad

Ingredients:
1 small papaya
2 large bananas
4 black plums
2 prickly pears sliced (cactus pears)
1 coconut with water
1-2 tablespoon lemon juice
  1. Cut all fruit except coconut and put in a bowl
  2. Sprinkle with lemon juice.
  3. Crack the coconut, sprinkle coconut water over fruit.
  4. With a spoon, scrape some coconut shavings and place on top (to your liking).
  5. Chill 1-2 hrs before serving.

Pawpaw BawBawQuaw

You guys are so lucky, you get a BONUS RECIPE! I had so much left over papaya,IMG_20150607_155405

I had to use it all for something. I made some Filipino Adobo chicken the same night I was making the fruit salad, so I decided to make a sauce to go with the chicken. So I found a base for a sweet fruit bbq sauce and altered it to make Pawpaw BBQ sauce. Its a great blend of sweet and spicy!

Pawpaw BBQ

  • Servings: 5.5 cups
  • Time: 1 hr 15 min
  • Difficulty: Easy

Ingredients:
1 tablespoon vegetable oil
1 sweet onion finely diced
3/4 cup sugar
1 1/2 teaspoons crushed red pepper
1/2 teaspoon chili powder
1/2 cup lemon juice
1/4 cup rum
1 cup water
1/2 cup seasoned rice vinegar
5 cups large, diced papayas
2 teaspoons kosher salt
  1. Heat the oil in a pot over medium heat, and add in the onion.
  2. Cook, until the onions are translucent, stirring continuously to ensure the pieces do not brown.
  3. Sprinkle the sugar, peppers, chili powder, and lemon juice over the onions, and stir until the sugar dissolves.
  4. Pour in the rum, water, and vinegar.
  5. Bring the ingredients to a boil.
  6. Add in the diced papaya, and adjust the seasonings with the salt, if desired.
  7. Bring the mixture to a boil again, reduce the heat to med-low and simmer covered for 45 minutes.
  8. Take the pan off the heat, and let the mixture cool slightly.
  9. Mash with potato masher for a courser sauce or  transfer the mixture to a blender, and puree the sauce until smooth.
  10. Transfer the BBQ sauce to a bowl, and set aside until ready to serve.

You Eat Ants?

And yes, despite the disappointment from last week, this week I actually ate a bug. I ate a few ants that I found crawling on the sidewalk. I was going to try and get more, but birds kept on eating the ant food I laid out!

Here’s the proof.

Will you Love the Way they Tickle?

The fruit salad was alright. I actually found out I don’t really love pawpaw. Its ok, but not great. Maybe the papaya I got wasn’t the best. I know the large one wasn’t super ripe, but the small one I got was ripe enough. I LOVED the bbq sauce though. It was DELICIOUS. And the ants, well in such low quantity, they didn’t have much of a taste, but they were slightly tart.

Verdict:

Fruit Salad – 6.5/10

BBQ sauce – 9.5/10

Ants – meh, alright/10

Sword in the Stone – Shortbread Cookies, Turkey Leg, Water Strider, Roast Pig, Honey Cake

I think Sword in the Stone is one of the least plot driven movies in the Disney Universe. Arthur (Wart) basically has fun with Merlin until he randomly pulls out the sword and is king. End movie. It’s a fun movie though…although, it doesn’t have much food.

I wanted to make digestive cookies, because I really like those. However, I don’t think they existed in the 14th century. So I found a great recipe for shortbread cookies!

Ingredients:
1/2 cup sugar
1 cup Butter
2 1/4 cup flour
1 teaspoon almond flavoring
  1. Cream butter & add sugar gradually.
  2. Mix in almond flavoring.
  3. Cream thoroughly.
  4. Add flour 1/4 cup at a time.
  5. Mix well.
  6. Divide dough into several portions.
  7. Flatten one portion at a time on lightly floured surface with hands.
  8. Roll out smooth with lightly floured rolling pin.
  9. Cut into desired shapes & place on ungreased cookie sheets.
  10. Bake at 325°F for 10-15 minutes until golden brown around edges.

Kay’s Turkey Leg

I have made full turkeys before and didn’t want to make another, so I went to my supermarket and bought a pack of turkey legs. They were fun to cook and actually tasted better than the turkey legs you get at Disney parks (heresy, I know)

Kay's Turkey Leg

  • Servings: 2
  • Time: 60 min

Ingredients:
2 Turkey Legs
4 Tablespoons Butter
1/2 teaspoon Basil
1/2 cup Chicken Stock
Salt/Pepper to taste
  1.  Preheat the oven to 350F
  2. Soften the butter
  3. Coat the legs in butter
  4. Coat the legs in spices
  5. Place drumsticks in baking dish with chicken stock
  6. Cook in oven for about an hour or until legs reach a temp of 180F

I JUST ATE A BUG!

I’m going to be a disappointment here. When Arthur is a fish, his fishy instincts gain hold of him and he eats a water strider perched on top of the moat.

I went out a few times to search bodies of water in hopes to catch a water strider and eat it, but I wasn’t able to find one (but I did get attacked by mosquitos). If I ever find one, I’ll cook it up and eat it.

Roast Pig

Part of a meal shown in the movie was a full roasted pig.

They also show some ham and stuff, but of course, we’ve made that stuff before.

This was another kinda cop-out. I don’t have the resources to cook a full pig on a spit. However, there is a restaurant kinda near me in Chicago called Sun-Wah BBQ. They often have full roasted pigs hanging in the window.

So I went there and ordered some roast pig. It was delicious.

But if you so desire to roast a pig on a spit, you can find directions at this site.

Honey Cake

Along with the roast pig, there is some kind of domed cake.

I wasn’t sure what it was, but after some research, I decided that Honey Cake was a popular medieval dish, so I made that. It didn’t turn out exactly how I wanted, but it was still tasty, albeit very sweet.

Honey Cake

  • Servings: 8
  • Time: 60 min
  • Difficulty: Medium

Ingredients:

Cake

3 Eggs
3/4 cup Honey
1  cup Flour
1/2 tsp Baking Powder
1/2 tsp Salt

Frosting

2/3 cup Honey
1 Extra Large Egg White
1/8 tsp salt
1 tsp vanilla

Cake

  1. Preheat the oven to 350F (or 325 if using a glass bowl)
  2. Beat the eggs until extra frothy.
  3. Gradually add most of the honey to let mixture thicken.
  4. Fold in flour and pour mixture in a small cake tin. (I used a pyrex glass bowl to get the dome effect.)
  5. Cook for 45m-1hr. Use a toothpick to see if the middle has cooked
  6. Remove from heat
  7. Add honey frosting on top.

Frosting

  1. Warm honey in a saucepan on low
  2. Combine the whites, salt and vanilla.
  3. Beat with a mixer on slow speed until the whites stiffen
  4. Pour the honey into the mixture
  5. Beat for 10 minutes on high until the mixture stiffens again

This week wasn’t the best overall week for food. The drumsticks were delicious and the shortbread cookies were tasty.

Probably one of the most famous Disney food scenes out of all of the animated movies. The spaghetti kiss. We tried recreating the famous scene, but our dog wasn’t as willing as Lady. All-in-all, Lady and the Tramp had a good haul of food. And our greyhound loved the food too.

Passed-up Wedding Cake (with fondant)

Toward the start of the movie, Tramp was looking for a good place to eat, before settling on Tony’s. One of the options is a cake shop.

We have made lots of cake throughout this blog, but never a wedding cake. So we made a delicious wedding cake, with fondant and everything

Wedding Cake and Fondant

  • Servings: 12
  • Time: 50 min (overnight fondant setup)
  • Difficulty: Medium-Hard
  • Print

Ingredients:

Cake

1 package (18 ounce) betty crocker white cake mix
1 cup all-purpose flour
1 cup granulated sugar
3 whole eggs (even for white cakes)
1 cup water
1 cup sour cream
1 teaspoon almond emulsion (stronger than flavoring) (or 2 teaspoons almond extract)
1 teaspoon vanilla extract

 Fondant

1 package (16 ounces) white mini marshmallows (use a good quality brand)
2 5 tablespoons water
2 pounds (about 8 cups) sifted confectioners’ sugar
1/2 cup solid vegetable shortening

Cake

  1. In a bowl, mix 1st 3 ingredients. (see notes below) Set aside.
  2. Place remaining ingredients in mixer bowl then add the dry.
  3. Mix on low speed for 30 seconds, until dry ingredients are incorporated; mix at medium 2 minutes.
  4. This makes 1 & 1/2 times the usual batter than a ‘straight’ cake mix. It will fill one of the following pans: 8″ sq; 12″ round; 9x13x2; OR one 10″ and 6″ round.
  5. Pour into pan(s) and bake as you usually do. I prefere to bake at 300 degrees F. for 20 minutes, then turn oven up to 325 degrees F. for an equal time OR until you can smell cake If it has pulled away from the edges of the pan it is *over done*. You should have a flat cake that won’t (usually) need leveling & is not sticky on the top when it cools.

Special NOTES:.

  1. There is NO oil, butter or margarine in this recipe.
  2. Use large eggs.
  3. If almond extract (not emulsion) is used, add 2 teaspoons or to taste.
  4. Can use ANY cake flavor.
  5. Flavorings can change depending on cake flavor you use. Try a combination of 1 part vanilla, 1/2 part butter flavoring and 1/4 part almond.
  6. It is important to mix the dry ingredients well especially if using a chocolate mix or you will have white spots in the finished cake. I use a wire whisk.

Fondant

  1. To make marshmallow fondant, place marshmallows and 2 tablespoons of water in a microwave-safe bowl. Microwave 30 seconds on high; stir until mixed well. Continue microwaving 30 seconds more; stir again. Continue until melted (about 2 1/2 minutes).
  2. Place 3/4 of the confectioners’ sugar on top of the melted marshmallow mixture. Fold sugar into marshmallow mixture. Flavoring can be added at this point if desired. Place solid vegetable shortening in easily accessed bowl so you can reach into it with fingers as you are working. Grease hands and counter GENEROUSLY; turn marshmallow mixture onto counter. Start kneading like you would dough. Continue kneading, adding additional confectioners’ sugar and re-greasing hands and counter so the fondant doesn’t stick. If the marshmallow fondant is tearing easily, it is too dry; add water (about 1/2 tablespoon at a time) kneading until fondant forms a firm, smooth elastic ball that will stretch without tearing, about 8 minutes.
  3. It’s best to allow Marshmallow Fondant to sit, double-wrapped, overnight. Prepare the fondant for storing by coating with a thin layer of solid vegetable shortening, wrap in plastic wrap and then place in resealable bag. Squeeze out as much air as possible. Marshmallow Fondant will keep well in refrigerator for several weeks.
  4. When not working with fondant, make sure to keep it covered with plastic wrap or in a bag to prevent it from drying out. When ready to use, knead fondant until smooth. Roll out fondant 1/8 in. thick.
  5. To color fondant: If you need to tint the entire batch of fondant, add a little icing color to the melted marshmallow mixture before adding confectioners’ sugar. For smaller amounts of tinted fondant, add icing color to portions of fondant as needed.

Donuts and Coffee for your pooch

Disclaimer: DO NOT feed your dog donuts and coffee. Caffeine is toxic to dogs. But that didn’t stop Jim Dear. While having his morning coffee and donut, he decided to give Miss Lady some.

Even though it’s a bad breakfast for dogs, it’s a perfectly good breakfast for humans. We found a great donut recipe that fits the time period of the movie well.

Early 1900's Donuts

  • Servings: 12
  • Time: 20 min
  • Difficulty: Medium
  • Print

Ingredients:
1 egg
1 cup sugar
2 tablespoons butter
1 cup sweet (aka whole) milk
1 pinch salt
2 teaspoons baking powder
2 cups flour
1/2 teaspoon ginger
1/4 teaspoon nutmeg
lard or oil, for frying
extra flour
  1. One egg, one cup of sugar, two tablespoons of butter, beaten together till creamy.
  2. Add one cup of sweet milk, a pinch of salt, two teaspoons of baking powder stirred into two cups of flour*.
  3. Add one-half teaspoon of ginger and one-fourth teaspoon of nutmeg to the flour.
  4. Beat well, roll out about one-fourth of an inch thick.
  5. Cut out all the cakes before beginning to fry.
  6. Cook in deep fat that will fry a small walnut-sized ball of the dough in about sixty-five seconds.
  7. Do not let the fat get above that degree of heat.

*NOTE: I don’t know if I messed up the recipe or what, but I had to add about double the flour asked for. The dough was too sticky to shape so I just added more flour until I could shape the donuts to fry, which I used 2 different sized lids to make the circle shape and the circle hole.

Lady’s Rib-eye Steak and Mushy Peas

For the Rib-eye steak. I salted the meat beforehand, and then threw it on the grill until I got a medium-rare cook.  The mushy peas recipe is as follows.

Mushy Peas

  • Servings: 4
  • Time: 15 min
  • Difficulty: Easy

Ingredients:
1 (10-ounce) package frozen green peas
1/4 cup heavy cream
1 tablespoon butter
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
  1. Bring a shallow pot of lightly salted water to a boil over medium-high heat.
  2. Add frozen peas, and cook for 3 minutes, or until tender.
  3. Drain peas, and transfer to a blender or large food processor.
  4. Add cream, butter, salt and pepper to peas, and process until blended, but still thick with small pieces of peas.
  5. Adjust seasonings to taste, and serve immediately.

Tony’s Famous Kissing Spaghetti and Meatballs

Now, the moment you’ve all been waiting for, the famous spaghetti and meatballs. Its such a beautiful scene on a bella notte.

We tried to recreate the scene with our dog, but Roxie wasn’t so sure about sitting at the table. We did manage to get a semi-decent picture.

Tony's Famous Spaghetti and Meatballs

  • Servings: 6
  • Time: 1.5 hrs
  • Difficulty: Easy-Medium

Ingredients:
2 cans (28 ounces each) diced tomatoes undrained
1 can (12 ounces) tomato paste
1 1/2 cups 1-1/2 water divided
3 tablespoons grated onions
1 tablespoon sugar
1 1/2 teaspoons 1-1/2 dried oregano
1 bay leaf
1 1/4 teaspoons 1-1/4 salt divided
1 teaspoon minced garlic divided
3/4 teaspoon pepper divided
6 slices day-old bread torn into pieces
2 eggs lightly beaten
1/2 cup grated Parmesan cheese
2 tablespoons minced fresh parsley
1 pound ground beef
hot cooked spaghetti
additional parmesan cheese optional
  1. In a Dutch oven, combine the tomatoes, tomato paste, 1 cup water, onion, sugar, oregano, bay leaf and 1/2 teaspoon each of salt, garlic and pepper. (NOTE: I’d also add some crushed red peppers)
  2. Bring to a boil.
  3. Reduce heat and simmer, uncovered, for 1-1/4 hours.
  4. Meanwhile, soak bread in remaining water. Squeeze out excess moisture.
  5. NOTE: I’d skip on the soaked bread and add 2 cups of bread crumbs and 1/4 cup milk
  6. In a large bowl, combine the bread, eggs, Parmesan cheese, parsley and remaining salt, garlic and pepper. Crumble beef over mixture and mix well.
  7. Shape into thirty-six 1-1/2-in. meatballs.
  8. Place meatballs on a rack in a shallow baking pan.
  9. Bake, uncovered, at 400° for 20 minutes or until no longer pink; drain.
  10. Transfer to spaghetti sauce.
  11. Simmer, uncovered, until heated through, stirring occasionally.
  12. Discard bay leaf.
  13. Serve with spaghetti with additional Parmesan if desired.

Tony’s Breadsticks

Accompanying the spaghetti is a bowl of breadsticks. Mary had made this recipe before, so we decided it would be good. However, when I made it, the bread turned out too sweet. I’m not sure why. So just a forewarning while making it, maybe add a little less sugar.

Tony's Bread Sticks

  • Servings: 8
  • Time: 50 min
  • Difficulty: Medium

Ingredients:
1.5 cups Water
1 pkg. Yeast
1.5 Tbs Sugar
3 cups Flour
1/2 tsp Salt
  1. Mix ingredients
  2. Knead for 3 mins.
  3. Let raise for 10 mins
  4. Roll out on parchment paper to the size of a cookie sheet.
  5. Cut into 1.5 in strips
  6. Spread with butter
  7. add garlic, salt and Parmesan cheese on top
  8. Let rest for 10 mins
  9. Bake at 350F for 20 mins

Will you call it a bella pasto (beautiful meal)?

Overall the recipes were good. I was a little tired and out of it when making the spaghetti and meatballs. I would have made the meatballs a bit spicier if I were on my game, and probably used bread crumbs as opposed to soggy bread. But they still turned out pretty good.

I’ve always wanted to eat a plate. This was my chance. There is tons of crazy food in Alice in Wonderland. And the best part is that, since it takes place in a “wonderland” there is no wrong way to make the food.  It was great fun experimenting how to do the Drink Me and finding a way to make an edible plate. Now, before you ask, we didn’t eat a clock. That is one of the most memorable things in the movie, but since it wasn’t prepared as a food, we didn’t make it. Sorry 😦

I forgot how entertaining Alice in Wonderland is too. The last time I had watched it, I was a little kid and half the movie went right over my head while the other half scared me. Watching it as an adult was much more enjoyable.

Drink Me (Cherry Tart, Custard, Pineapple, Roast Turkey Drink)

So you fall down a rabbit hole and land in a mysterious place? What is the first thing you do? Well drink a strange drink sitting on a table of course.

She even examines it and notes that it might be poison, but downs it anyway.

Well it never really shows what is inside the “Drink Me” bottle, but she describes the flavors. At first it tastes like cherry tart, and then like custard, then pineapple, then roast turkey. That meant I got to make a multi-layered drink!

Drink Me

  • Servings: 6
  • Time: 60 min
  • Difficulty: Medium

Ingredients:

Cherry Tart

1 pound red cherries
2 pounds sugar
1/2 pint water
3 bottles carbonated water (soda)

 

Custard

1.2 cups milk
1/4 cups cream
4 eggs yolks
2 Tbs sugar
2 tablespoons cornstarch
1 teaspoon vanilla extract

Pineapple

1 can Pineapple
1/4 c Sugar
1 tsp Lemon Juice

Roast Turkey

1/2 c Turkey
1/4 c Gravy
2 Tbs Cranberry Sauce
1/2 c Water
1/8 tsp Chicken Bouillon
Salt to Taste

Cherry Tart

  1. Put the clean, seedless cherries and sugar in a saucepan. If you want your cherries on the super-tart side, add less sugar.
  2. Cover the pan and leave at room temperature for 2 hours. The cherries need time to soak up the sweetness of the sugar. It’ll be so tangy that you’ll need the water to dilute it later.
  3. Add the 1/2 pint of water and stir until all the sugar dissolves. You’re looking for one mostly uniform consistency (the cherry chunks will keep it from being entirely uniform).
  4. Bring the contents up to a boil.
  5. Then reduce the heat and simmer for fifteen minutes. It should maintain a light bubble the entire time, reducing the liquid and turning almost syrupy.
  6. When finished, strain the mixture.
  7. Squeeze all the moisture from the cherries into a separate saucepan. Don’t just strain it — really squeeze out all the juices. Simmer the strained liquid until it thickens like maple syrup.
  8. Then take the pan off, let it cool to room temperature and move it to a sealed vessel for storage in a refrigerator
  9. Put one or two spoons of it into a glass of soda water. Sparkling water (or even just water) works, too.
  10. Feel free to experiment with the ratio to find your personal taste. It may take a try or two — but once you find the right combination, it’ll be easy.

Custard

  1. Bring milk and cream to a simmer slowly on low heat.
  2. Whisk the sugar and cornstarch together, add the egg yolks, combine well.
  3. Slowly whisk the warm milk into the egg mixture, whisking constantly. Add vanilla. Return to the saucepan and stir gently until thickened. Serve hot, or cool to use as a layer in trifles, or fill tart pans.
  4. Tip. If using it hot, it can be kept warm in a jug set in a pan of hot water with a bit of cling film on top to prevent a skin forming.

  1. Put all ingredients into a blender
  2. Blend
  3. Chill

Roast Turkey

  1. Place all ingredients into a blender
  2. Blend
  3. The mixture should be thick, but still able to move when you tilt the container.

Layering

There are a couple ways to layer the drinks. The first way is the way I used for the tube. Tilt the container pour each of the liquids, starting with the bottom-most liquid, slowly into the container. The contents should slide down the side of the container and rest on top of each other.

For more open-faced containers, you can use the spoon method. Pour the first liquid into the bottom of the container. Then place a spoon upside-down and at an angle, so the tip of the spoon is resting just above the bottom layer, and pour the second layer onto the spoon slowly. Move the spoon to cover the whole first layer.

Eat Me Sugar Cookies

After she foolishly drinks the luckily-not-poisoned, but enlarging drink, she goes on and eats some strange cookies that appear out of no where in the hopes that she will shrink back down.

These look like regular sugar cookies. We found a great recipe and whipped some up.

Eat Me Sugar Cookies

  • Servings: 4 dozen
  • Time: 30 min
  • Difficulty: Easy

Ingredients:
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup softened butter
1 1/2 cups white sugar
1 egg
1 teaspoon vanilla extract
3 to 4 tablespoons buttermilk
sprinkles or colored sugar for decorating
  1. Preheat oven to 375 degrees F.
  2. In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
  3. In a large bowl, cream together butter and sugar until smooth. Beat in the egg and vanilla. Gradually blend in dry ingredients. Add enough of the buttermilk to moisten the dough and make it soft, not wet.
  4. Roll rounded teaspoons of dough into balls and place on a ungreased cookie sheet. With a brush or fingers, moisten the top of each cookie with the remaining buttermilk and slightly flatten the top of each cookie. Sprinkle with raw sugar or colored sprinkles.
  5. Bake for 8 to 10 minutes or until slightly golden. Let stand for 2 minutes before removing to cool on a rack.

Bread and Butterflies

Ok, so this one is a little out of place. I’m combining two recipes. In the Walrus and the Carpenter section, the Carpenter makes some bread to go with the oysters,

and later on, we see some wonderful, punny creatures, bread and butterflies. So here is the recipe for the bread, and then how to make the bread and butterflies. We weren’t exactly successful in making the bread and butterflies, but it was fun to try.

Bread and Butterflies

  • Servings: 10
  • Time: 2 hr
  • Difficulty: Medium-Hard

Ingredients:
4 cups white flour plus extra for dusting
7 grams fast-action dried yeast (one packet)
1 teaspoon salt
1.5 cups lukewarm water (give or take a little)
a little oil for greasing
  1. Make the dough by tipping the flour, yeast and salt into a large bowl and making a well in the middle.
  2. Pour in most of the water and use your fingers or a wooden spoon to mix the flour and water together until combined to a slightly wet, pillowy, workable dough – add a splash more water if necessary.
  3. Tip the dough onto a lightly floured surface and knead for at least 10 mins until smooth and elastic.
  4. This can also be done in a tabletop mixer with a dough hook.
  5. Place the dough in a clean oiled bowl, cover with cling film and leave to rise until doubled in size.
  6. Heat oven to 430F/220C/fan 200C/gas 7.
  7. Knock back the dough by tipping it back onto a floured surface and pushing the air out.
  8. Mould the dough into a football ball shape that will fit a 900g loaf tin and place in the tin.
  9. Cover with a clean tea towel and leave to prove for 30 mins.
  10. Dust the top of the loaf with a little more flour and slash the top with a sharp knife if you want.
  11. Bake the bread for 15 mins, then reduce the heat to 190C/fan 170C/gas 5 and continue to bake for 30 mins until the loaf sounds hollow when removed from the tin and tapped on the base.
  12. Leave the bread on a wire rack to cool completely.
  13. The loaf will stay fresh in an airtight container for 3 days or can be frozen for 1 month

Bread and Butterfly

  1. Get a pipe cleaner and fold it in half.
  2. Twist the ends together, but leave them seperated a bit to make antenna.
  3. Take a piece of bread and roll it over the pipe cleaner.
  4. Wet the edge of the bed so it sticks to itself in the roll.
  5. Slice 2 more pieces of bread for wings.
  6. Stick toothpicks in the bottom of the bread.
  7. Stick the wings into the body.
  8. Put honey at the top of the body and attach 2 googley eyes.
  9. Spread butter on the wings.

Little Oysters on a Half-shell

The Walrus and the Carpenter is a pretty messed up story. They eat little baby oysters. Now, people do that all the time, but these were cute anthropomorphic little oysters. The carpenter goes into what he’s putting into the sauce to eat with the oysters. It turns out he was probably describing a mignonette. So I found a good recipe and made it with the raw oysters. Both me and my wife aren’t fond of oysters, but we stomached them anyway.

Little Oysters on a Half-shell

  • Servings: 4
  • Time: 1 hr
  • Difficulty: Easy

Ingredients:

Oysters

10-20 Oysters
Crushed Ice or rock salt

Mignonette

1 tablespoon coarsely ground white or black peppercorn (vary amount according to taste)
1/2 cup white wine vinegar (I used red, but white would be more accurate)
2 tablespoons finely chopped shallots or sweet onions
1 tsp Ground mustard seed
salt to taste

 

 

 

 

Oysters

  1. Clean the oysters really well under running water with a course brush. Dirt is everywhere, so be sure to scrub, especially around the hinge
  2. Insert a butter knife as far into the hinge as possible.
  3. Rock the knife gently up and down as you push the knife further into the oyster
  4. The oyster will finally open.
  5. Detach it from the top and bottom of the shell, but leave it in the bottom.
  6. Place in crushed ice or rock salt.

Mignonette

  1. Combine all ingredients
  2. Chill for at least an hour.
  3. Serve with the Oysters

A Mad Unbirthday Cake

This was another fun recipe. When Alice meets the Mad Hatter, he gives her an unbirthday cake.

We know what the outside looks like, but there was no way of knowing what the inside was because it explodes into a firework. So, it being wonderland, we had to do something interesting, so we made a multicolored cake!

A Mad Unbirthday Cake

  • Servings: 12
  • Time: 40 min
  • Difficulty: Medium

Ingredients:
1 box white (vanilla) cake mix
food coloring
2 cartons pink frosting
water **according to cake package
egg white **according to cake package
oil **according to cake package
1 teaspoon vanilla extract
1 tablespoon milk
  1. Prepare cake mix according to package directions, add vanilla and milk.
  2. Blend well.
  3. Separate into 3 bowls.
  4. Dye each bowlful a different color.
  5. Pour batter into three 9″ cake pans that have been greased and floured.
  6. Bake at 350 for 20-25 minutes.
  7. Allow to cool completely.
  8. Cut into cakes with 3″ and 6″ rings starting in the center (this will make it look like a target).
  9. Take the largest ring of one color, the 6″ ring of another color, and the 3″ center piece of the last color and put them together.
  10. This creates a new bottom layer.
  11. Frost.
  12. Continue to do this for all 3 layers.
  13. When you cut into the cake it will make a checkered pattern.
  14. Use pink frosting and white icing. Put one “trick” candle on top.
  15. Merry Unbirthday!

Edible White Chocolate Plate

Another fun recipe. We see the mad hatter dip his saucer into his tea and take a bite out of it.

Now, I wasn’t too keen on ingesting glass, so I decided to make an edible saucer. I went through a few different possibilities. I thought about making sugar glass, but I wasn’t sure how to make it white. Then I thought, why not make it out of white chocolate, that’s already white.

I found a tutorial on how to make a mold. And made one for a plate. Note: I didn’t use nearly enough silicone. I would say use between 20-30 oz, not 10 like I did.

Edible White Chocolate Plate

  • Servings: 1
  • Time: 2 hr
  • Difficulty: Hard

Ingredients:
1 Package white chocolate chips
 3 10oz tubes Silicone
1/2 c dish soap
 64 oz water
  1. Follow the instructions here to make a mold of a plate
  2. Melt the white chocolate chips either in the microwave, on the stove or double boiler.
  3. Pour the melted white chocolate into the mold.
  4. Chill for 1-2 hrs
  5. Remove from mold and there you have your saucer..

Mushroom to Help you Grow Big and Strong

Another thing Alice eats on the trust of others. The caterpillar just tells her to eat a mushroom when around 50% are inedible, 20% are toxic and 1% are deadly (Not sure if this is a credible source).

Will it Send you Down the Rabbit Hole?

Not the absolute tastiest movie, but one of the funnest cooks. I loved being able to try and figure out the different ways to make some of the stuff.

The Drink Me was interesting. It was fun being able to go through all the flavors. The cake and the cookies were probably the best part.

If you like oysters, then maybe you’ll like the oysters and mignonette, I dunno.

The edible plate was a good idea in concept, but for some reason, I couldn’t get the chocolate to melt right and I didn’t have enough silicone to make a full plate mold. If I had gotten it melted right, and had more silicone, I think it would have turned out better

Cinderella – Porridge, Homemade Toast, Cream, Corn, Bonus 19th Century Hot Chocolate

A semi-timely post coinciding with the live-action Cinderella, which we watched as well! Unfortunately, we didn’t do any recipes from the live-action Cinderella…although the sweets that were shown at the ball were tempting. 
The animated Cinderella is a perfect breakfast movie, as all the food in the movie is breakfast food. So get that fire going, brush some cinders on your face and discover all the food from Cinderella.

Lucifer’s Cat Cream

And on the subject of Lucifer, who would unironically name their cat after Satan? Why would Cinderella’s dad marry someone who unironically named their cat after the devil? Wouldn’t that raise some red flags? It’s not exactly subtle.

  1. Melt the butter in a saucepan over a medium heat (or in microwave) be sure not to let the butter boil

Greedy Gus-Gus Corn

I ate some corn, like Gus. I didn’t have to run away from a hungry cat while doing it though. There’s not really a recipe for this, just corn. You can steam it until it’s soft. Or let it go stale and eat it as chicken feed.IMG_20150413_212141

Drizella’s Porridge

Cinderella is shown taking some breakfast to her step-family. We wanted to be accurate with the type of breakfast she would be serving, seeing as this is supposed to take place in 19th-century France. However, it seems like the animators either didn’t see it as taking place in France, or just weren’t accurate with their French breakfasts. It looks like Cinderella is taking her family porridge and tea.

However, porridge isn’t a common French breakfast. They usually eat grains, coffee, and fruits. But because it really looks like porridge, we were true to the animation and made some porridge.

Drizella's Porridge

  • Servings: 1
  • Time: 10 min
  • Difficulty: Easy

Ingredients:
50 grams porridge oats
350 milliliters milk or water or a mixture of the two
greek yogurt thinned with a little milk
clear honey to serve
  1. Put the oats in a saucepan, pour in the milk or water and sprinkle in a pinch of salt.
  2. Bring to the boil and simmer for 4-5 minutes, stirring from time to time and watching carefully that it doesn’t stick to the bottom of the pan.
  3. Or you can try this in a microwave. Mix the oats, milk or water and a pinch of salt in a large microwaveproof bowl, then microwave on High for 5 minutes, stirring halfway through
  4. . Leave to stand for 2 minutes before eating.
  5. To serve. Pour into bowls, spoon yogurt on top and drizzle with honey.

Anastasia’s Toast

This is more accurate to France. Toward’s the end of the movie, Cinderella brings her step-family breakfast yet again. This time it’s toast.

We didn’t want to just buy some bread at the store and toast it, we make our own bread from scratch.

Anastasia's Toast

  • Servings: 20
  • Time: 3 hrs
  • Difficulty: medium-hard

Ingredients:
4 cups bread flour divided
2 teaspoons active quick rising dry yeast
2 teaspoons salt
1 1/2 cups warm water
  1. Put 1/4 cup of bread flour on your clean counter top and reserve.
  2. Place remaining 3 3/4 cups bread flour in your mixer bowl.
  3. Spoon the yeast on one side of the bowl, and the salt on the other side.
  4. Pour in the warm water and with your regular mixer paddle, mix on low speed until the dough comes together in a mass.
  5. Switch to the dough hook. Mix on medium speed for 2 minutes. Dough should clear the sides but stick to the bottom. If it is too sticky, add 1 tablespoon of flour at a time. If too dry, add 1 tablespoon of water to dough to adjust.
  6. Let the dough rest for 5 minutes.
  7. Turn the mixer on again and mix for 3 minutes. (If mixing by hand, mix for 6 minutes, then let rest for 7 minutes and mix again for 7 minutes.)
  8. Take the dough out and place on the counter. Remember that 1/4 cup of flour that we reserved? We’ll use it now.
  9. As you knead the dough by hand, incorporate more flour as you need.
  10. Knead by hand until the dough is very satiny, smooth, tight and formed into a nice, compact ball.
  11. Place this dough in a large lightly oiled bowl
  12. Turn dough over so that all sides have a thin coating of oil.
  13. Cover with plastic wrap and set in warm place for 1 1/2 hours to let rest and rise.
  14. Dough should almost double in size.
  15. While the dough is rising, about 1 hour into the rising stage, preheat your oven to 450F and place your pizza stone, inverted baking sheet or covered cast iron pot into the oven to heat up.
  16. If you are using a loaf pan for steam, also place that into the oven, on the very bottom rack, off to one side of the oven.
  17. After the dough has risen fully, punch dough down and form back into a ball. Poke your finger on the surface – the dough should give into the pressure and slowly creep back up.
  18. Ok, here’s the fun part. Cut the dough into half – you’ll shape one half at a time (keep the other piece under wraps)
  19. Pick up the dough – stretch it out until it forms a big rectangle.
  20. Dust your work surface with flour and fold over the ends of the dough inwards in 3rds.
  21. Now do a little “karate chop” lengthwise down the middle of the bread and stretch out the long ends again.
  22. Fold over in half. The karate chop helps get the middle tucked inside.
  23. Pinch all sides shut. This is important – you want to make sure that all ends including the short ends are pinched tightly to create a seal. This allows the bread to rise & expand up and out evenly. If the bread looks a little lopsided, you can try to fix it by letting it rest 5 minutes and gently stretching it out again. Just don’t knead the dough again – you’ll pop all the beautiful gas that took 1.5 hours to create!
  24.  Turn the bread over so that it is seam side down.
  25. Cover the loaf with a damp kitchen towel. Repeat with the other dough ball.
  26. Leave the loaves to rest on your well-floured pizza peel or cutting board for 30 minutes.
  27. After bread is done rising, take a sharp paring knife and make 3-4 shallow, diagonal slashes on the surface of the loaf. This allows the steam in the bread to escape so that it expands evenly during the baking process.
  28.  When you are ready to bake, remove your baking vessel from oven. Carefully slide the gorgeous loaf into or onto your baking vessel.
  29. If you are using pizza stone or inverted baking sheet: You can probably fit both loaves on it at the same time, just leave at least 6-8″ of space between the loaves. -> Get a 1/2 cup of water ready next to the stove.
  30. Open the stove, put your bread in the oven and throw the water on the oven floor or in the pre-heated loaf pan.
  31. Immediately close the oven door. This creates your steam. -> Bake 20-25 minutes.
  32. Check temperature of the bread – internal temperature should read 190-200F.
  33. Remove and let cool before cutting into it.
  34. If you are using a long cast-iron pot or covered baker: -> Before closing the lid on your pot/baker, put 1/4 cup of water directly in the pot. Cover immediately.
  35. Put pot in oven. -> Bake 10 minutes.
  36. Remove lid of pot. Bake another 14 minutes.
  37. Check temperature of the bread – internal should be 190-200F. Remove and let cool before cutting into it.
  38. Repeat with other loaf. (For convection ovens- bake 8 min covered, 10-12 min uncovered. Check temperature of bread)
  39. To re-crisp the crust, put in 375F oven for 5 minutes.

Bonus: 19th Century Hot Chocolate

It seems like she just has hot water in her tea kettle. But we didn’t feel like making tea. So even though it probably wasn’t hot chocolate, we found a great recipe for 19th century hot chocolate. Remember, sweet chocolate didn’t come to be until later.

19th Century Hot Chocolate

  • Servings: 1
  • Time: 10 min

Ingredients:
1/2 pint water
1/2 pint milk
1 ounce bakers chocolate
  1. Scrape fine one square of Baker’s chocolate (which will be an ounce).
  2. Put it in a pint of boiling water and milk, mixed in equal parts.
  3. Boil ten minutes, and during this time mill it or whip it with a Dover egg-whip (one with a wheel), which will make it foam beautifully.
  4. Sweeten to the taste, at table.

Is it a dream/a wish your heart makes?

Everything was alright. Nothing was blow-your-glass-slippers-off amazing. The best thing about the meal was the homemade toast. That was really good. The hot chocolate was kind of disappointing. Of course, I don’t love bitter chocolate, and it was pretty bitter.

“Fe-Fi-Fo-Fum I smell the blood of an anthropomorphic rodent!” – Willie the Giant (paraphrasing…kinda).
I had not seen either of these movies, but I had seen the short of Mickey and the Beanstalk included as part of Fun and Fancy Free. I hadn’t seen the other short film that was part of Fun and Fancy Free, Bongo the Bear. That was enjoyable, though, not as fun as Mickey and the Beanstalk.
Make Mine Music was kind of like Fantasia, but with more jazzy and contemporary songs. It was quite enjoyable. It make me want to boogie. It also included Peter and the Wolf. I used to watch that short ALL THE TIME when I was a kid. I absolutely loved it. Too bad it didn’t have any food to cook in it.

‘Murican Ice Cream (Make Mine Music)

Make Mine Music is set up kinda like Fantasia. It is a series of animations set to music. The only food shown in the whole movie comes from my favorite section of the movie called All the Cats Join in. The animation is happening as a pencil draws all of it, set to jazzy music. Some kids go into a Malt Shoppe and get some ice cream. I wish Malt Shoppes were popular when I was in high school, that would have been groovy.

Anyway, the “bartender” starts serving up a great big ice cream boat for a bunch of the cool cats to eat.

It makes it pretty easy to see what is going into the ice cream.  And luckily, I didn’t have to buy a bunch of different tubs of ice cream, because it looks like only chocolate, vanilla and strawberry are used. GO NEAPOLITAN!

'Murican Ice Cream

3 scoops Strawberry ice cream

handful Chopped walnuts
2-3 Sliced bananas

1 Maraschino Cherry
  1. Scoop the ice cream into a dish
  2. Cut up a banana into the dish
  3. Spread some chopped walnuts onto the ice cream
  4. Sprinkle on some fresh raspberries
  5. Top with whipped cream and a maraschino cherry

Stacked Fish Sandwich and Avocado Spread  (Make Mine Music)

Right after the kids have delicious ice cream, the “bartender” starts to make a strange sandwich. He puts on a green paste and a whole fish.

I didn’t bother going into detail with the fish cook. I used the same method as I did in the Pinocchio post. So see there for how to cook the fish.

Stacked Fish Sandwich and Avocado Spread

  • Servings: 2-3
  • Time: 40 min
  • Difficulty: Easy

Ingredients:
8 pieces White bread
Ketchup to taste
3-5 leaves Lettuce
1 Whole perch roasted
1 Green olives
 Avocado Spread
2 Avocados
2 teaspoons Lemon juice
1/4 teaspoon Salt
    Avocado Spread

  1. Using a sharp knife, cut the avocados in half, working around the pit.
  2. Twist avocados to separate the halves.
  3. Spoon out the pit and scoop out the avocado flesh into a resealable plastic storage bag.
  4. Add lemon juice and salt, seal bag, and mash the avocado with your hands until mixture is combined and spreadable.
  1. Cut the tip off one corner of plastic bag and pipe mixture onto bread.
  2. Top with ketchup.
  3. Stack pieces of bread on top of one another with lettuce, spread and/or ketchup.
  4. Put whole fish between slices of your choice. (see Pinocchio on how to roast the fish)
  5. Top with green olive for decor.

Luana’s White Cake (Fun and Fancy Free)

Now onto Fun and Fancy Free! The first segment is all about Bongo the Bear, however, no food is shown in it, besides a caterpillar chomping on a leaf…and I didn’t want to eat any more plants after Bambi.

In the second section, Jiminy Cricket jumps into a live-action house where a little girl, Luana is having a birthday party with her strange adult friend and his two ventriloquist dummies. It was actually pretty funny. They made some great puns. I’m all about puns. Anyway, that lucky little girl had two cakes at her party. The first one shown is a nice white cake with pink flowers on it.

We couldn’t find any pink frosting at the store, so we settled for red in this recipe.

Luana's White Cake

  • Servings: 16
  • Time: 35 min
  • Difficulty: Easy

Ingredients:
1 box Pillsbury Moist Supreme White Cake Mix
1 1/4 cups Water
1/2 cup Vegetable oil
4 Egg whites
2 tablespoons Orange juice
1 tablespoon Milk
1 teaspoon Vanilla extract
1-2 carton White frosting
Pink icing
  1. Preheat oven to 350 F.
  2. Coat two 9″pans with shortening and flour.
  3. In mixing bowl combine all ingredients until moistened, then beat with mixer on medium speed for 2 minutes.
  4. Pour batter into pans.
  5. Bake at 350 for 29-33 minutes.
  6. Toothpick should come out clean when inserted into cake.
  7. Cool 10-15 minutes before removing from pan.
  8. Cool cake completely before frosting.
  9. Frost bottom layer first, then put the second cake on top and frost over.
  10. Use pink icing to make flowers or spell “happy birthday.”

A Cricket’s Chocolate Delight Cake (Fun and Fancy Free)

Jiminy, that lucky cricket, start scarfing down an entire human-sized chocolate cake slice and the crazy adult friend is telling the Mickey and the Beanstalk story.

Even though they had some good desserts at Luana’s house, the real food doesn’t come into play until Mickey and friends get up to the giants house.

Slim Bean Sandwich (Fun and Fancy Free)

This is probably the most depressing meal I’ve made. Poor Mickey, Donald and Goofy. Mickey pulls out a slice of bread and cuts paper thin slices. Which is insanely hard to do, I tried. I need one of those Japanese sushi knives.

Slim Bean Sandwich

  2. Take out the 1 piece of white bread

Luckily, fortune rests upon Mickey, Donald, and Goofy when they wander into the giant’s castle and find all of his food. I’ll just post screenshots of all of food that didn’t require recipes here.

Jello is the only non-fresh food in that list of pictures, but it is so easy to make from a box, I didn’t want to bother with the recipe.

Anyway, one of the center pieces on the table is a huge chicken.

I looked into a medieval-style of cooking the chicken, because the giant lives in a castle, just like in the medieval times.

The recipe I went off of calls for saffron. I had no idea of how crazy expensive that was. $10 for a little pinch of it! So I found out that Turmeric is a good substitute, so I used that.

Willie's Medieval Chicken

  • Servings: 8
  • Time: 2hr 30 min
  • Difficulty: Medium

Ingredients:
1 small packet saffron threads *or 1/2 t. turmeric
400/14 ounces 400ml/14fl. oz white wine
1 roasting chicken
1 teaspoon freshly ground black pepper
1 teaspoon ground cinnamon
5 small garlic bulbs
5/2 pieces 5cm/2in fresh ginger peeled and finely chopped
olive oil
sea salt
  1. Preheat the oven to 230C/450F/Gas 8.
  2. Soak the saffron or tumeric in a little of the wine.
  3. Rub the chicken all over with the pepper and cinnamon and place the chicken in an ovenproof dish.
  4. Cut the tops off the garlic bulbs so you can see the cloves and arrange them around the chicken with the ginger.
  5. Pour a little olive oil into the garlic bulbs and pour the saffron and remaining wine around the chicken.
  6. Season the chicken with salt and place in the oven.
  7. Roast for 20 minutes
  8. Lower the oven temperature to 170C/325F/Gas 3
  9. Cook for another 40 minutes, partly covered with tinfoil, until the juices run clear and the chicken is cooked through.
  10. Baste the chicken and garlic regularly during cooking.

Coconut cake (Fun and Fancy Free)

Coconut cake

  • Servings: 16
  • Time: 1hr 40 min
  • Difficulty: Medium-Hard

Ingredients:

Cake

vegetable oil for cake pan
14 1/4 ounces Cake flour
1 1/2 teaspoons Baking powder
1 teaspoon Kosher salt
1/2 cup Coconut milk
1/2 cup Coconut cream
8 ounces Unsalted butter room temperature
16 ounces Sugar approximately 2 1/4 cups
1 teaspoon Coconut extract
4 Egg whites
1/3 cup Coconut water

Frosting

3 large egg whites
12 ounces sugar, approximately 1 3/4 cups
1/3 cup coconut water
1/2 teaspoon cream of tartar
1/4 teaspoon kosher salt
1 teaspoon coconut extract
1/2 teaspoon vanilla extract
1 bag shredded coconut

Cake:

  1. Preheat the oven to 350 degrees F.
  2. Lightly oil 13×9 inch cake pan.
  3. Line the bottom of pan with parchment paper.
  4. Oil the parchment paper and then flour the pan.
  5. Set aside.Place the flour, baking powder and salt into a large mixing bowl and whisk to combine.
  6. Combine the coconut milk and coconut cream in small bowl and set aside.
  7. Place the butter into the bowl of a stand mixer and using the paddle attachment, cream on medium speed until fluffy, approximately 1 minute. Decrease the speed to low and gradually add the sugar slowly over 1 to 2 minutes.
  8. Once all of the sugar has been added, stop the mixer and scrape down the sides.
  9. Turn the mixer back on to medium speed and continue creaming until the mixture noticeably lightens in texture and increases slightly in volume, approximately 2 to 3 minutes.
  10. Stir in the coconut extract.
  11. With the mixer on low speed, add the flour mixture alternately with the milk mixture to the butter and sugar in 3 batches, ending with the milk mixture. Do not over mix.
  12. In a separate bowl, whisk the egg whites until they form stiff peaks.
  13. Fold the egg whites into the batter, just until combined.
  14. Divide the batter evenly between the pans and bang the pans on the counter top several times to remove any air and to distribute the batter evenly in the pan.
  15. Place in the oven on the middle rack.
  16. Bake for 40 minutes or until the cake is light golden in color and reaches an internal temperature of 200 degrees F.
  17. Cool the cake in the pans for 10 minutes then remove and transfer to a cooling rack.
  18. Once the cakes have cooled completely cut across the equator of each to form 4 layers.
  19. Place the 1/3 cup coconut water into a small spritz bottle and spray evenly onto the cut side of the 4 layers.
  20. If you do not have a spritz bottle you may brush the coconut water on with a silicone pastry brush.
  21. Allow to sit while preparing the frosting.

Frosting:

  1. Bring 1 quart of water to a boil in a 4-quart saucepan over high heat.
  2. Decrease the heat to medium to maintain a steady simmer.
  3. In the meantime, place the egg whites, sugar, coconut water, cream of tartar and salt into a medium size-mixing bowl.
  4. Place the bowl over the simmering water and immediately begin beating with an electric hand mixer set to low speed.
  5. Beat for 1 minute and then increase the speed to high and continue to beat for 5 minutes.
  6. Remove from the heat and beat in the coconut and vanilla extracts for 1 minute.
  7. Allow the frosting to sit for 5 minutes before using.
  8. Frost the top and sides of the cake and sprinkle with the shredded coconut.
  9. Refrigerate for at least 30 minutes before serving.

Raspberry Lemonade (Fun and Fancy Free)

Right before we come to the end of the Mickey and the Beanstalk story, it cuts back to the live-action scene and we see Jiminy stealing more food, this time some lemonade with raspberries in it.

I kinda went a step beyond just putting a couple raspberries into lemonade and made full on raspberry lemonade. It was a good decision too.

Raspberry Lemonade

  • Servings: 6

Ingredients:
1/2 cup Raspberries fresh or frozen
4.5 cups Water
cup Freshly squeezed lemon juice (about 4 large lemons)
cup Sugar
  1. Mix the lemon juice into the water.
  2. Add the sugar.
  3. Place raspberries in a bowl and lightly mash so the juices get flowing
  4. Add the raspberries
  5. Stir together
  6. (Optional) Let sit in fridge for a couple hours to allow the flavors to mesh

Fe-fi-fo-Plum Pudding (Fun and Fancy Free)

I had a huge debate with people about what exactly this food was. Look at the mound with the cherry on top.

I had seen a recipe with a picture that looked like that mound before. I think it was in one of my mom’s old cookbooks. My first thought was a chocolate-lava cake, but that didn’t feel right. I asked a bunch of people and finally, my mother-in-law came up with the answer. Plum Pudding. I had never had plum pudding, so I was excited to try it.

Fe-fi-fo-Plum Pudding

  • Servings: 12
  • Time: 3 hrs 15 min

Ingredients:

Pudding

1 cup flour
3/4 teaspoon cloves
3/4 teaspoon nutmeg
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 cup ground, raw potato (shredded works, too)
1 cup ground, raw carrot (again, shredded works)
1/2 cup raisins *gold or brown
1 cup mixed dried fruit *preferrably with plums
1/2 teaspoon lemon extract
3 tablespoons melted butter
1/4 cup sugar
1/4 cup flour
1/4 teaspoon salt
1 teaspoon vanilla extract or rum flavoring
water
butter or heavy cream

Sauce

1/4 cup sugar
1/4 cup flour
1/4 teaspoon salt
1 teaspoon vanilla extract or rum flavoring
water
butter or heavy cream
Pudding:
  1. Sift spices with flour and other dry ingredients.
  2. Add potatoes, carrots, raisins and mixed fruit, lemon extract, and butter.
  3. Mix well until batter is moistend through (this will take a few minutes).
  4. Put in buttered mold, fill about 2/3 full.
  5. Three 3″ fluted pans will hold the mixture.
  6. Steam for 3 hours.
  7. You can use a crockpot with steaming capabilities or put the molds in a larger baking dish, fill larger dish with boiling or very hot water, cover with foil and steam in the oven at about 300 degrees for 3 hours.
  8. Let sit 10 minutes before removing puddings from molds.
Sauce:
  1. Combine sugar, flour, salt, and vanilla/rum flavoring.
  2. Add enough cold water to make a thin paste.
  3. Cook over low heat until paste thickens up.
  4. Add butter or cream until desired thickness is reached.

Candied Beets (Fun and Fancy Free)

Behind the plum pudding are some pink ovals on greens. One of my facebook friends figured this one out. Candied beets. So naturally, I let the beet drop!

Candied Beets

  • Servings: 6
  • Time: 15 min

Ingredients:
3 tablespoons dark brown sugar
2 tablespoons orange juice
1 tablespoon unsalted butter
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
6 steamed whole beets
 
  1. Combine brown sugar, orange juice, butter, salt and pepper in a large nonstick skillet.
  2. Cook over medium heat until the sugar and butter are melted and starting to bubble.
  3. Stir in beets and cook until most of the liquid has evaporated and the beets are coated with glaze, 8-10 minutes.
  4. Serve hot or warm.

Donald Duck Dumplings (Fun and Fancy Free)

When the giant is gathering up food to eat, he grabs some, what I assume are, dumplings.

When I tried making them, I didn’t let them cook with moisture, so they turned out really dry, but the flavor was really good!

Donald Duck Dumplings

  • Servings: 12
  • Time: 40
  • Difficulty: Easy

Ingredients:
2 cups Self-rising flour
1 1/4 sticks Butter (cold)
Sea salt
Freshly ground black pepper
Cold water
 
  1.  Preheat oven to 375.
  2. Put flour into mixing bowl.
  3. Using a coarse grater, grate cold butter into flour.
  4. Add a pinch of salt and pepper.
  5. Using your fingers, gently rub the butter into the flour until it begins to resemble breadcrumbs.
  6. Add a little cold water to help it bind into dough.
  7. Divide dough into 12 pieces and gently roll each into a round dumpling.
  8. Place dumplings in pan and place on top of pot or dish full of water. Cover so the moisture doesn’t escape
  9. Cook for 30 minutes.

MMM, Chocolate Pot-roast (Fun and Fancy Free)

We don’t actually get to see this one. Willie the Giant holds a pot to his face and takes a big whiff and says “mmm, chocolate pot-roast.”  That seems really strange. Chocolate on pot-roast? Well I tried making it anyway. And it was delicious. Who would think that chocolate would flavor beef so well.

MMM, Chocolate Pot-roast

  • Servings: 6
  • Time: 8 hr

Ingredients:
3 pounds beef chuck pot roast
1 carrot
1 red onion
4 stalks celery
1 red bell pepper
1 green pepper
rosemary
cinnamon
black pepper
paprika
salt
1/2 bottle red wine
1/2 gallon chicken stock
 1/2 teaspoon Chili powder
5 pieces Bakers chocolate 60% or higher cocoa
  1. Coarsley chop the vegetables and toss into pot.
  2. Pour in the wine and simmer until the liquid is reduced by at least half.
  3. Sprinkle the top of the beef with chili powder, paprika, cinnamon, pepper, and salt then broil on a tray until browned.
  4. Put in crock pot, lay chocolate on top of roast.
  5. Pour in chicken stock.
  6. Add vegetables.
  7. Cook on low for 6-8 hours.
  8. Enjoy.
  9. Optional: Puree half the vegetables and chicken stock together for a gravy.

Smishmashio Green(ish) Gravy (Fun and Fancy Free)

Along with the Chocolate Pot-roast, the giant points out that there is “smishsmash, smishmosh, smish….GREEN GRAVY”

The pistachio gravy I made didn’t turn out very green…just slightly green-ish, but it still tasted good.

Smishmashio Green(ish) Gravy

  • Servings: 12
  • Time: 20 min
  • Difficulty: Easy-Medium

Ingredients:
1/4 cup Unsalted pistachio nut ground coarsely
1/2 Medium white onion
2 tablespoons Olive oil
1/2 cup Heavy cream
1/4 cup Milk
1/4+ cup Flour
Salt to taste
Pepper to taste
Crushed red pepper
  1. Heat oil in medium saute pan.
  2. Saute onions until translucent.
  3. Add pistachios and enough olive oil to lightly coat.
  4. Cook for about a minute (the pistachios should not change color).
  5. Add cream until heated throughout.
  6. Remove from heat.
  7. Add seasonings to taste.
  8. Put in food processor or blender, puree
  9. Return to stove, add milk and flour.
  10. Stir until you get a good gravy thickness
  11. Remove from heat.
  12. Serve.

Will it Make You Say “Fe-fi-fo-yum?

The Make Mine Music ice cream was good, just as good as ice cream is. Nothing amazingly special. The fish sandwich was an odd combination. It was hard to eat a boney fish inside of a sandwich. The avocado spread alone was good though.

It tasted good?

The live-action food from Luana’s house was really good. The cakes were tasty, but the raspberry lemonade is the true recipe that took the cake from the cakes.

Now onto the giant’s feast. Wow, that was a LOT of food. The chicken was the real winner here. We had some guests over to help us eat the food, and they all raved about the chicken. Although everything was really good. I was impressed with the plum pudding, having never tasted it before. The chocolate pot roast was good and even better with the green gravy. It is kinda crazy how the bitterness of the chocolate and the saltiness of the potroast and pistachios really blended well. And I can’t forget about the coconut cake. That was to die for. My wife didn’t like it because she doesn’t like coconut, but everyone else that tried it loved it.
